Pemmican is derived from the strips of bison Dry Meat. Traditionally Dry Meat was pounded in between two stones into a course dry powder. We were taught that the resulting powder was called ‘Pemmican’. The Pemmican would usually be eaten by hand as is by our Elders, but on special occasions some would add rendered fat (lard) to it, and/or berries (fresh or dried), and/or brown sugar then hand roll it into balls. Recently we’ve also seen our Pemmican powder added to mashed avocado as a great dip for tortilla chips.
Our Pemmican is the coarse powder by itself. We’ll let you decide if you’d like to add anything to it. That’s if it’s not eaten up too quickly.
